Cooking fava beans
Ingredients for 4 people.
Ingredients:
- 500 g dried fava beans
- 1 large onion
- 3 leeks
- half medium pumpkin
- 2 courgettes
- 6 carrots
- 300 g tender beans
- 1 bunch of spinach
- 1 bunch of Swiss chard
- medium cabbage medium
- water and bicarbonate
- olive oil
- salt
- good pepper
- sweet allspice
We put the fava beans in water and a little bicarbonate the night before. The next morning we strain them. In a large pot, put oil and some of the raw vegetables cut into squares: the onion, the leeks, the pumpkin, the carrot, the courgette and the beans.
Add the fava beans and the leafy vegetables (spinach, Swiss chard and cabbage, cut into pieces). Add water and bring to a boil.
Let it cook for approximately 1 hour on medium heat, and season with salt, pepper and sweet pepper.
