Mallorcan white onion cake with fig jam

Ingredients for a big cake.

For the pasta:

  • 1 cup and a half of olive oil
  • 1 cup and a half of water
  • the loose flour that is drunk

For the filling:

  • 2 or 3 large Majorcan white onions
  • 1 small jar of fig jam
  • goat cheese or sobrassada
  • virgin olive oil
  • salt
  • good pepper

The day before, cut the onions into slices and leave them in a colander with a little salt, so that they soak up the water. Before making the pasta, fry the onion a little with a little oil, and season it with salt and pepper, if necessary. It doesn't have to be completely cooked, as we will bake it later.

Turn on the oven at 200 °C.

To make the pasta, pour the oil and water into a bowl, and gradually add the flour, stirring little by little, and then knead it until you get a homogeneous mass. We spread it with our hands in an oiled baking tin or with baking paper.

Spread the fig jam on top of the pasta, and add the onion on top. We bake the cake until it is golden and the dough is crispy. We can have it for the first 10 minutes with the heater only on low, and then we change the heat to high and low, about 20 or 30 minutes. Five minutes before finishing it, we will add some slices of goat cheese or sobrassada, as we like it best; or if we prefer, we will add nothing more.
